Kerala is famous for its lakes, sea food and other dishes. Specialty is the variety of breakfast dishes. It include typical Kerala dishes like Appam, Veesappam, Putt and Idiyappam as well as Tamil Nadu items like idli and dosa. Though chutney and sambar are Tamil Nadu specials, years back Kerala has made those side dishes their own. So, what are Kerala specials?
Appam and its derived versions are part of Christian Cuisine of Kerala. Christians include toddy to prepare its derivatives. Even if toddy is not used yeast and coconut water are best alternatives of these two. It’s true, as South Indians prefer rice dishes to wheat, rice is the main ingredient of most of breakfast items. Rice rich in carbohydrates provides enough energy to stay to fresh whole day. It helps to have a fresh beginning everyday too.
Appam and its derivatives like kuttiyappam, vattayappam, palappam and vellayapam use raw rice as main ingredient along with coconut, cooked rice, yeast, salt and sugar as supplementary ingredients. Idiyappam and veesappam are almost same, except that veesappam is flat. Both resemble Chinese noodles in appearance a lot. Any curry, from chutney to chicken or stoo or fry – taste best with these dishes.
Upma made from sooji, wheat etc is also a part of Kerala breakfast. Vegetables and pepper add extra flavours to upma, make it healthy too. Steam cake, prepared using mixing rice flour, coconut and salt, is a quick breakfast item and a typical Kerala food too. It tastes best with banana or chicken or pappad and cooked green peas. You can prepare hundred varieties of steam cake by adding any special item to the flour. Rice flour used for its preparation is slight different. It’s not finely grinded flour used for making idiyappam or kozhukatta or any snack item of rice.
Every one loves traditional kozhukatta prepared by grandmothers that holds all ingredients and flavours of old dishes. Similar to other Kerala breakfast items, it’s purely prepared from finely grinded rice flour, by adding coconut and salt. If you want to add a slight sweetness to your dish, add a tea spoon sugar too.
Now the last word about everyone’s favourite – dosa and idli! Dosa is equally loved by both North Indians as well as tourists. Its true essence lies in its variety as well as its amazing combination with chutney and sambar.
